Ingredients:
• 1 small cabbage or 1/2 large ( chopped
• 2 carrots ( finely chopped)
• 1 onion (diced)
• 2 stalks celery ( finely chopped)
• 4 cloves garlic (minced)
• 1 can (400g) chickpeas (drained & rinsed)
• 1 can ( 400g) chopped tomatoes
• 4 cups broth (vegetable or chicken)
• 1 teaspoon dried oregano
• 1 teaspoon dried basil
• Salt and black pepper to taste
• 1 tablespoon lemon juice (freshly squeezed)
• 1/4 fresh parsley (chopped)
Instructions:
• In a large pot, heat a drizzle of olive oil over medium heat.
• Add onion, celery, carrot, and Sauté for about 5 minutes, until softened.
• Stir in garlic, thyme and oregano for about 1min
• Add chickpeas, broth and chopped tomatoes and bring to a simmer.
• Add the cabbage and let it Simmer for about 10 minutes or until desired texture.
• Remove from the heat and stir in parsley and a squeeze of fresh lemon
• Serve and enjoy this warming, nutritious, and satisfying soup!
