Mediterranean Chicken Meatballs

gluten free | high protein

You can easily omit the cheese if you are dairy free!

👩🏻‍🍳INGREDIENTS:
Meatballs:
2 lbs ground chicken
1/2 cup feta (crumbled)
1 zucchini (shredded & moisture squeezed out)
3 tsp garlic (minced) 🧄
2 tbsp dill (fresh, finely chopped)
1 tbsp mint (fresh, finely chopped)
1 egg (large, organic) 🥚
1 cup almond flour (organic, fine)
1 tsp garlic salt 🧂
1/2 tsp pepper
Zest of 2 lemons 🍋
Juice of 1 lemon

👩🏻‍🍳INSTRUCTIONS:
Simply combine all ingredients in a large mixing bowl until fully incorporated. Form 22 large meatballs. Air fry at 400°F for 15 minutes (spritz with avocado oil spray prior). Full recipe for the veggies & couscous are on my blog 🤗
