Shredded salad mix (I like with purple cabbage and carrots)
2 chopped persian cucumbers
1 tsp garlic powder
1 tsp onion powder
A small amount of chopped peanuts, green onions and cilantro for toppings
Dressing ( 1/4 cup of low sodium soy sauce, juice of one lime, 1/2 cup pb2 powder – or real peanut butter – 2 tbsp rice wine vinegar, 1 tbsp maple syrup, water until thin consistency.

Defrost frozen rice and edamame
Chop salad and cucmbers
Add everything together in a large bowl and top with cilantro, green onions and peanuts
