Here’s my Chinese Chicken Vermicelli Salad for a simple and healthy meal that incorporates Asian flavors. I love this salad because it’s low carbs, high fiber, and great for weight loss.

Salad Ingredients:
Shredded Chicken, Dried Vermicelli, Red Cababge, Carrots, Cilantro, Scallions, Persimmon or Mandarin Oranges

I don’t measure the ingredients and just base it on how hungry I am. You honestly can’t be wrong with how much or how little you add.

Soy ginger vinaigrette
– 2 tbsp soy sauce
– 3 tbsp rice vinegar
– 1 tbsp water
– 1 tsp sesame oil
– 1 tsp raw honey
– 1 glove garlic
– 1 tsp grated ginger
Toasted sesame seeds *optional*

Tip:
– Soak the cabbage to reduce rawness
– Cook the vermicelli in boiled water for about 5 mins, cover with a plate
