Servings: 4-5 people
Ingredients:
● 1 tablespoon coriander seeds
● 1 teaspoon mustard seeds
● 1 teaspoon cumin seeds
● 1 teaspoon black peppercorns
● 1 teaspoon poppy seeds
● 1/4 teaspoon fenugreek seeds
● 6-7 dry red chillies
● 9-10 cashew nuts
● 1 tablespoon tamarind paste
● A handful of curry leaves
● 2 tablespoons ghee
● 12-14 cloves garlic
● 1 box chopped mushrooms
● 1/4 teaspoon turmeric powder
● Salt, to taste
● 1 tablespoon jaggery
● 1/2 cup coconut milk
● 2 tablespoons tamarind pulp
● 2 slices bread
● Chutney, for serving

Instructions:
Step 1: Dry Roast Spices
● Dry roast 1 tablespoon coriander seeds, 1 teaspoon each of mustard seeds, cumin
seeds, black peppercorns, and poppy seeds, and 1/4 teaspoon fenugreek seeds until
fragrant.

Step 2: Soak Chillies and Cashew Nuts
● Soak 6-7 dry red chillies and 9-10 cashew nuts in water.

Step 3: Grind Masala Paste
● Grind together the roasted masala, soaked chillies, cashew nuts, 1 tablespoon
tamarind paste, and a handful of curry leaves to form a fine paste.

Step 4: Saute Garlic and Curry Leaves
● Heat 2 tablespoons of ghee in a pan. Add a handful of curry leaves and 12-14 cloves
of pounded garlic. Cook until the raw flavor dissipates.

Step 5: Cook Mushrooms
● Take 1 box of chopped mushrooms, coat them in flour, rub, and wash with water. Add
1/4 teaspoon turmeric powder and cook until tender.

Step 6: Add Masala Paste and Gravy Ingredients
● Pour the prepared masala paste into the pan along with salt to taste, 1 tablespoon
jaggery, 1/2 cup coconut milk, and 2 tablespoons tamarind pulp. Cook until the gravy
thickens and releases ghee.

Step 7: Combine Mushrooms and Gravy
● Add the cooked mushrooms to the gravy and simmer until well combined.

Step 8: Serve with Bread
● Toast 2 slices of bread. Apply a layer of chutney on one slice, place the mushroom
ghee roast on top, and cover with another slice of bread. Serve immediately.
