Gluten free Ragi Banana Bread

1/2 cup chopped walnuts
3 ripened bananas mashed

1+ 1/4 Ragi ( finger millets) flour
1 tsp baking powder
1/2 tsp baking soda
1/4 tsp salt
1 tsp cinnamon powder
1/4 tsp nutmeg powder

Sieve all ingredients together and keep it aside.

In a separate bowl

1/2 cup unsalted softened butter
1/2 coarse brown sugar ( Jaggery powder)

Mix well till fluffy and creamy

Now in this mix mashed bananas, all dry ingredients and walnuts. Fold them all together till everything is mixed together. DO NOT OVER MIX.

Preheat over for 10-12 min at 180 degrees centigrade

Layer bread loaf tin with parchment paper and pour your batter in the pan and tap on the floor. Top it up with chopped almonds and place it in oven.

Bake for 20-25 minutes.

Let it cool completely and then slice into bread sized pieces.
