Ingredients:
• 1 cup cabbage, thinly sliced
• 1 cup carrot, grated
• ½ cup bell pepper, thinly sliced
• 1/ 4 cup parsley, finely chopped
• 1/4 cup onion, finely chopped
• 3 egg
• 1¼ cup milk
• salt and black pepper to taste
• 1 teaspoon baking powder
• 1 cup all-purpose flour (or whole wheat flour)
Instructions:
• Prepare the batter: In a large mixing bowl, whisk the egg, salt, black and milk. Add flour and baking powder. Mix well until combined
• Add vegetables: Stir in the cabbage, carrots, bell pepper, onion, and parsley. Mix until everything is well combined. The batter should be thick but spreadable. Adjust with a little more water if needed.
• Cook the pancakes: Heat a non-stick pan over medium heat and add a little oil. Pour about ¼ cup of batter onto the pan, spreading it into a round shape.
• Flip and cook: Cook for about 2-3 minutes until golden brown on one side, then flip and cook for another 2-3 minutes.
• Serve: Enjoy with a dipping sauce of your choice

• 1 tablespoon fresh lemon juice
• 1/4 teaspoon garlic powder
