Ingredients:
For the Hara Bhara Kebab:
● 3 Potatoes, boiled
● 1 cup Spinach
● 1/2 cup Peas
● 2 Tbsps Coriander
● 100g Paneer
● 1 tsp Jeera Powder
● 1/2 tsp Chilli Powder
● 1/2 tsp Amchoor Powder
● 1/2 tsp Garam Masala Powder
● 3 cloves Garlic
● 2 Spicy Green Chilies
● 1/2” piece Ginger
● 3 Tbsps Roasted Besan (or bread crumbs)

For the Red Pepper Sauce:
● 1 cup Hung Curd
● 2 Tbsps Cream Cheese
● 2-3 Medium Red Bell Peppers
● 2 Whole Garlic Cloves
● Salt & Pepper to taste
● 1 Tbsp Lime Juice

Process:
Red Pepper and Garlic Dip:
1. Roughly chop the bell peppers. Roast them with garlic, adding seasoning as desired.
2. In a blender, combine the cream cheese, hung curd, roasted bell peppers, garlic, and
a little oil. Blend until smooth and creamy.

Hara Bhara Kebab:
1. Boil the peas for 3-4 minutes, then add the spinach for 30 seconds. Transfer the
mixture to ice-cold water to stop the cooking process.
2. Blend the pea-spinach mixture with coriander, green chilies, ginger, and garlic to form
a smooth paste.
3. Grate the boiled potatoes and paneer together.
4. Add the green paste, roasted besan (or breadcrumbs), spices (chili powder, amchur
powder, jeera powder, garam masala), salt, and pepper. Mix well until all ingredients
are combined.
5. Shape the mixture into small tikkis and pan-fry until golden brown on both sides.

Assembly:
1. Toast slices of sourdough bread.
2. Spread the red pepper sauce generously on one side of the bread.
3. Place the hara bhara kebab on top.
4. Top with pickled onions, chaat masala, and chopped coriander.
5. Squeeze fresh lime juice over the sandwich, and serve hot.
