Mediterranean Tuna Sandwich
Ingredients:
1 can tuna in olive oil (drained)
2 slices whole grain or sourdough bread
2 tbsp Greek yogurt (or mayonnaise)
1 tsp Dijon mustard
½ tsp lemon juice
1 tbsp chopped red onion
1 tbsp chopped cucumber
1 tbsp chopped black olives
½ tsp dried oregano
Salt & black pepper (to taste)
2 slices tomato
A handful of baby spinach or arugula
Instructions:
In a bowl, mix the tuna, Greek yogurt (or mayo), mustard, lemon juice, red onion, cucumber, black olives, oregano, salt, and black pepper.
Toast the bread for extra crunch.
Spread the tuna mixture evenly over one slice of bread.
Top with tomato slices and spinach/arugula.
Close with the second slice of bread, cut in half, and enjoy!
