Ingredients:

1 ½ cups millet flour (foxtail, pearl, or sorghum)

2 tbsp psyllium husk powder

1 tsp baking soda

½ tsp baking powder

½ tsp salt

1 tbsp sugar or honey

¼ cup thick curd (yogurt) (or plant-based yogurt)

¼ cup warm water or milk (adjust as needed)

2 tbsp olive oil or melted butter

1 tbsp white sesame seeds (optional, for topping)

How to 🧑🏻‍🍳?

Mix psyllium husk with ¼ cup warm water and let it sit for 5-10 minutes until it forms a gel.

In a mixing bowl, combine millet flour, baking soda, baking powder, salt, and sugar.

Add curd, olive oil, and psyllium husk gel. Mix well.

Knead into a soft dough, adding more warm water if needed.

Cover and let it rest for 15-20 minutes to allow the psyllium husk to hydrate the dough.

Preheat oven to 180°C

Divide the dough into 4-6 portions, shape into buns, and place them on a baking tray lined with parchment paper.

Brush with milk or butter and sprinkle sesame seeds on top.

Bake for 20-25 minutes, until golden brown.

Let the buns cool for 10-15 minutes before slicing.
