Wholewheat Banana Bread –

Dry ingredients-
Wholewheat flour/atta- 3/4 th cup
Refined flour/maida- 1/4 th cup
Baking soda- 1 tsp
Baking powder- 2 tsp
Cinnamon powder – 1 tsp
Salt- a pinch

Wet ingredients-
Ripe banana (don’t use unripe or slightly ripe one’s)-3
Oil- 1/4 cup
Sugar – 2 tbsp
Milk-vinegar mixture- 1/4 cup
Curd- 1/4 cup
Vanilla essence – 10 drops

Process-
1. Mash the ripe bananas with sugar and make a nice pasta, you can grind them together as well.
2. Take lukewarm milk and add some vinegar (about 2 tsp) into it and leave it for 5 minutes.
3. Add oil, vanilla extract/essence, milk vinegar mixture and curd.
4. Combine it well.
5. Take the dry ingredients in a seperate bowl and mix in well. Add in the wet ingredients and mix them gently.
6. Add in the chopped nuts and put it into the making tray to bake. You can also cook it in a kadhai or pressure cooker.
7. Preheat the over and bake for 25-30 mins at 170 degree Celsius. Once done put in a skewer to check, if it comes out clean it’s done.
8.Cool it on a rack and serve it.

Note- You can chocolate chunks instead of nuts. Please check the sweetness of the batter before putting it to bake, if needed you can add more sugar powder, the ripe bananas will make all the difference. The riper the banana is the better the bread will turn out and need lesser sugar.
