Crispy Butter Chicken Sandwich

Ingredients, 1 serving x 4 servings
Butter chicken:
1 x 4 medium chicken breasts (150-175g each boneless skinless, ½ inch thick)
Butter chicken spices:
¾ tsp x 1 tbsp lemon juice (squeeze of half a lemon)
1/8 tsp x ½ tsp garam masala, salt, garlic powder, ginger powder, paprika, chilli powder, turmeric
Dash x ¼ tsp pepper
Breading:
1 tbsp x ¼ cup all-purpose flour
1 large beaten egg
½ cup x 2 cups cornflakes (seasoned with the same butter chicken spices)
Bread with flour, egg, and seasoned cornflakes then oven bake at 400°F for 20 mins or air fry at 390°F for 16 mins.
Sauce:
¼ tsp x 1 tsp butter, minced ginger, honey
¾ tsp x 1 tbsp minced garlic
¼ x 1 medium onion (sliced)
¼ cup x 1 cup diced tomato (or sub with canned tomato and omit water)
2 tbsp x ½ cup water
1 tbsp & 1 tsp x 1/3 cup 0% Greek yogurt
Sauce spices:
1/8 tsp x ½ tsp paprika, garam masala
Dash x ¼ tsp salt, chilli powder, turmeric
For the bun I used carbonaut original hamburger bun with 140 calories, 12g of protein and only 2g of carbs from healthy planet!
