– 1 ripe banana or 120 g (1/2 cup) applesauce
– 1 egg
– 120 g (1/2 cup) Greek yogurt
– 80 ml (⅓ cup) maple syrup or honey
– 150 g (1 ½ cup) oat flour (or preferred flour)
– 50 g (½ cup) vanilla protein powder or flour
– 1 tsp vanilla extract
– 2 tsp baking powder
– ⅙ tsp salt
– 60 ml (¼ cup) milk of choice
– Chopped strawberries

1. Preheat oven to 350°F (180°C).
2. In a bowl, mash banana, then combine with egg, yogurt, and maple syrup. Mix until smooth.
3. Add flour, protein powder (or more flour), vanilla extract, milk. Stir well until combined.
4. Add chopped strawberries.
5. Bake for 30-40 minutes or until fully cooked inside. Do not overbake.
