Ingredients:

For the Moonglet:
1 cup moong dal (soaked overnight)
1-inch ginger
1 green chili
Water (as needed)
¼ cup chopped onion
¼ cup chopped carrot
¼ cup chopped capsicum
1 tsp salt
½ tsp cumin powder
¼ tsp turmeric powder
Oil (for cooking)
For the Sandwich:
2 slices of whole wheat bread
Green chutney (made with coriander, mint, and raw mango)
Tamarind jaggery chutney
1 cheese slice
Oil (for toasting)

Process:
Making the Moonglet:

Take 1 cup of moong dal, wash it well, and soak it overnight. By morning, the dal will become soft.
Add the soaked dal to a mixer along with ginger, green chili, and a little water. Grind it into a smooth paste and transfer it to a bowl.
In a chopper, finely chop the onion, carrot, and capsicum.
Add the chopped vegetables to the dal batter.
Mix in 1 tsp salt, ½ tsp cumin powder, and ¼ tsp turmeric powder. Stir everything well to form a thick batter.
Heat a pan and lightly grease it with oil.
Spread the moonglet batter in a square shape on the pan.
Brush a little oil on the top and cook on low flame, flipping it carefully until both sides are golden brown and cooked through.
Once done, remove it from the pan and set it aside.
Assembling the Sandwich:

Take two slices of whole wheat bread.
Spread green chutney (coriander, mint, and raw mango) on one slice.
Spread tamarind jaggery chutney on the other slice.
Place the cooked moonglet between the bread slices.
Add a cheese slice on top to enhance the flavor.
The sandwich is now ready for toasting!
Heat a pan, brush a little oil, and toast the sandwich until golden brown and crispy on both sides.
Remove from the pan, cut it with a pizza cutter, and pack it in a tiffin box.
