Ingredients
– 1 cup roasted chick peas
– 1 cup quinoa
– handful red cabbage
– leafy greens of choice ( I used romaine and baby red butter lettuce)
– red onion
– cucumber
– feta cheese (if you have issues with dairy don’t do cheese obiously 🙂
– avocado

Roasted Chickpeas
– Drain and rinse a can of chickpeas
– Toss with 2 tbsp olive oil, salt and pepper to taste, 1 tsp paprika and 1 tsp garlic powder.
– Cook in air fryer at 380 degrees for 8-10 min. (I do 9 minutes)

Creamy Green Dressing
– 1/2 cup greek yogurt
– juice of 1 lemon
– 1 cup fresh herbs (parsley, basil, cilantro, etc)
– 1 clove garlic
– 1/2 olive oil
– salt and pepper to taste
– 1/4 cup olive oil (or avocado oil)
Place in food processor or blender and blend until smooth. If you want it not so thick add more oil or water to get desired consistency.
