Ingredients (Serves 2, ~12 Aappe)
✅ For Batter:
1 cup moong dal (soaked 4 hours)
½ cup chopped spinach
¼ cup curd (for softness)
1 green chili
½ inch ginger
½ tsp cumin seeds
Salt to taste
1 tbsp flaxseeds (optional, extra fiber & protein)
½ cup grated paneer (extra protein & softness)
2 tbsp besan (for thickness & protein)
½ tsp Eno (just before cooking)
✅ For Added Veggies:
¼ cup onion (finely chopped)
¼ cup grated carrot
¼ cup finely chopped capsicum
1 tbsp coriander leaves
½ tsp black pepper
Instructions:
Blend Batter: Blend soaked moong dal, spinach, chili, ginger, cumin, flaxseeds, and curd into a smooth batter. Mix in grated paneer, besan, and veggies.
Add Eno & Mix Gently: Just before cooking, add Eno and mix lightly.
Cook Aappe: Heat appe pan, grease, pour batter, and cover. Cook for 3-4 mins until golden. Flip & cook the other side.
Serve hot with chutney!
