I haven’t always been the most confident in the kitchen. After all, I’m a fitness blogger, not a food blogger (and every time we share a video of me cooking, you guys comment on my lack of knife skills 😂)
What I AM good at is getting simple, healthy meals on the table in under 30 minutes. I follow this basic ‘formula’ and adapt it based on what’s in my fridge:
✅ PROTEIN
✅ PRODUCE
✅ SAUCE
👉SHEET PAN OPTION: preheat oven to 375°. Place protein on a sheet pan (we use and love Caraway pans!). If using sturdy veggies (like potatoes, carrots, broccoli) go ahead and chop + add those to the pan now too! Otherwise, add more tender produce (bell peppers, tomatoes, beans, etc) to the sheet pan half-way through baking. Bake for ~30 minutes until protein is cooked through and veggies are tender. Heat up sauce separately and drizzle over when you’re ready to eat!
👉STOVETOP OPTION: sauté protein until fully cooked. Remove protein from pan, then add produce + sauté until tender. Add protein back to the pan, and pour in sauce of choice, warming until heated through.
Either way, I like to serve with a grain (microwaveable farro or rice are our favorites) and sauce (our family loves store-bought curry or peanut sauce to keep things super easy).
This method of cooking has saved me so much time (and $$$) because I’m not buying a ton of ingredients for one-off recipes I’ll never make again or trying to follow a new recipe on a Monday night when everyone is hangry and dinner needs to be on the table ten minutes ago 😂
