CHIPOTLE LIME LIONSMANE BOWL Recipe ⬇️:
Ingredients:
8-16 oz Lionsmane Mushroom
2 tablespoons olive oil
2 teaspoons chipotle powder
1 -2 Tbs adobo sauce
1-2 tbs coco aminos
½ tsp garlic powder
½ tsp onion powder
Salt & black pepper, to taste
Juice from 1 lime
1/2 red bell pepper, sliced
1/2 green bell pepper, sliced
1/2 red onion, small chunks
1-2 small yellow squash
½ teaspoon chipotle powder
½ teaspoon salt
Juice of ½ lime
Serve w/ brown rice
Mushroom Lo Mein:
Ingredients:
8 oz spaghetti
8-16oz Lionsmane
2 tbsp Avocado oil
2 cups mixed vegetables (e.g., bell peppers, carrots, broccoli)
3 cloves garlic, minced
1/4 cup coco aminos
2 tbsp oyster sauce
2 tsp sesame oil
1 tsp sugar
1/2 tsp ground ginger
1/2 cup vegetable broth
1 tsp cornstarch mixed with 2 tsp water
Salt and pepper to taste
2 green onions, sliced (for garnish)
BLACK BEAN & POTATO TACO BOWL 🥣 RECIPE ⬇️:
Beans:
1 15 oz can of black beans, rinsed
1 tbs avocado oil
1/2 red onion
1 small red bell pepper
1-2 tbs Fresh parsley
1 tbs adobo sauce
1/4 cup vegetable stock
Salt to taste
Black pepper to taste
1 tsp cumin
1 tsp smoked paprika
1 tsp garlic powder
1 tsp chilli powder
Crispy Potatoes:
1 Large Russet Potato, cubed
1-2 tbs avocado oil
Salt to taste
Black pepper to taste
Garlic powder to taste
Sour cream:
1 cup of cashews, soaked in boiling water for 30 mins
1/2 lemon juice
1/2 cup water
1 tsp apple cider vinegar
1/4 tsp salt
1/4 tsp mustard
