Mango and Chicken Salad

Chicken:
• Chicken tenderloins
• Breadcrumbs
• Grated Parmesan cheese
• Salt
• Black pepper
• Paprika
• Olive oil

Salad Ingredients:
• Ripe mango, diced
• Baby spinach
• Arugula
• Cherry tomatoes, halved
• Cucumber, julienned

Dressing:
• 1 tsp sesame oil (5 ml)
• 1 tbsp soy sauce (15 ml)
• 1 tbsp (15 ml) rice vinegar
• 1 tbsp (15 ml) honey

Instructions:
1. Flatten the chicken tenderloins using a meat tenderizer.
2. In a bowl, mix breadcrumbs, grated Parmesan cheese, salt, black pepper, and paprika.
3. Coat each chicken tenderloin evenly in the breadcrumb mixture.
4. Heat olive oil in a pan over medium heat.
5. Cook the breaded chicken until golden brown, crispy, and fully cooked.
6. Let the chicken rest, then slice into strips.
7. Arrange baby spinach, arugula, cherry tomatoes, cucumber, mango, and grilled chicken strips on a plate.
8. In a small bowl, whisk together sesame oil, soy sauce, rice vinegar, and honey to make the dressing.
9. Pour the dressing over the salad.
