Mixed veg Dal paratha recipe
Preparation time: 25 mins Cooking time: 20 mins Makes: 6 parathas
Ingredients
1 cup atta
1 cup Mixed veggies*
3 tbsp cooked yellow moong dal
¼ portion avocado (optional)
¼ cup coriander leaves
1 tsp ajwain | omam
1 tsp garam masala
Salt as needed
1 tsp red chili powder
1 tsp oil
Ghee to make parathas
*I used broccoli, cauliflower, carrot and peas
Method:
• Steam the vegetables for 10-12 mins. I added broccoli, cauliflower, carrot and frozen peas
• Mash them well with a fork
• Add 3 tbsp cooked moong dal and ¼ portion avocado (optional)
• Mash avocado well
• Now add coriander leaves, red chili powder, garam masala, ajwain and salt.
• Add 1 cup of whole wheat flour to this
• Mix well, no need to add water
• Make into a soft dough
• If you feel the dough is loose, add 2-3 tbsp of flour to this.
• Drizzle 1 tsp oil. No need to keep aside for few minutes, you can make make parathas immediately.
• Make big lemon sized balls
• Dust with dry flour and roll into paratha
• Place it in hot tawa
• Cook on both sides
• Add ghee
• Mixed veg dal paratha ready
Notes:
1. You can add cooked toor dal instead of moong dal. Ensure the cooked dal is not watery.
2. You can add boiled and mashed potato or sweet potato.
3. Finely chopped spinach can also be added to the dough.
4. Do not puree the steamed veggies in the mixie jar, it might ooze water.
5. Do not leave the kneaded dough for a long time, immediately start making parathas.
6. Mixed veg paratha pairs with plain yogurt.
