I love meal prep for many reasons! Top reason being that if I don’t prep myself breakfast or lunches, I usually end up skipping them and regret it later. My blood sugar drops, I’m hangry, shaky, nauseous, and crabby! But having healthy options on hand prevents all of this. Keeps me energized and ready to chase after my two young kids! I’m counting down my top 5 favorite meal prep recipes starting with #5, Greek Salad!
The recipe:
-2 cups cooked rice (i used brown & lentils)
-1 can rinsed & drained chickpeas
-1/4-1/2 red onion
-1/4 cup finely chopped cucumber
-juice of 1 lemon
-1/4-1/2 cup feta crumbles
-2 handfuls chopped spinach
-drizzle of olive oil
-s&p to taste
-garlic powder to taste
-optional, add in Kalamata olives and juice
-Top with shredded rotisserie chicken for extra protein!
