This recipe is inspired by my childhood memories of Jimmi’s Kitchen in Esplanade, Kolkata’s Chinatown, and family feasts during Durga Puja.

Ingredients for No-Oil Chili Chicken:
1.29 lbs (585g) chicken breast, cut into bite-sized pieces
2 medium tomatoes, blended into a paste
1-inch ginger, finely chopped
8 to 10 cloves garlic, minced
1 tsp red chili powder
½ tsp salt (or to taste)
½ tsp black pepper powder
2 tbsp vinegar
1 cup water (adjust as needed)
1 tbsp soy sauce
2 tsp corn flour, mixed with 2 tbsp water (slurry)
4 green chilies, slit/ whole
1 bunch of green onions, chopped
1/2 cup fresh coriander leaves, finely chopped
