Recipe:
1- Rinse 1/2 cup quinoa under running water for 30 seconds to remove bitterness.
2- Boil 1 cup Vegetable broth (or water) in a saucepan.
3- Add quinoa & salt, reduce heat to low, cover, and simmer for 12-15 mins until all water is absorbed.
4- Rest for 5 mins (covered), then fluff with a fork.
5- Wash and chop the kale.🥬
6- Add kale to the bowl along with cooked quinoa.
7- After that, we will add pomegranate, blueberries, avocado, almond, walnut, and chia seeds.
8- For the dressing, we will add olive oil, maple syrup, lemon juice, Dijon mustard, black pepper, and salt, then mix well.
9- We will add the dressing and, lastly, feta cheese.
10- Your superfood salad is ready—enjoy!🤩
