Salisbury Steak Meatballs
Meatballs
1 lb ground beef & 1 lb ground pork
2 eggs
1/2 cup breadcrumbs
1 tsp each, dried parsley, oregano, onion powder, garlic powder
1/2 tsp salt
Bake at 350 18-20 minutes
Steak sauce
2 cups beef broth
1 packet brown gravy mix(*see note for recipe)

2 tablespoons ketchup
1 tablespoon Worcestershire sauce
Combine and simmer
Cornstarch Slurry
2 tablespoons cornstarch or arrowroot
2 tablespoons cold water

*brown gravy – 1 cup flour, 1/4 cup beef bouillon powder( make your own here.. https://youtu.be/OkZZA0MwslQ?si=OG6xUrCKDmAwvH4d ) 3/4 tbsp onion powder and garlic powder, 1/4 tsp paprika.

Pineapple Chicken
6 chicken thighs
1/2 teaspoon salt
1/4 teaspoon pepper
1/3 cup hoisin sauce(*see note)
marinade for 2 hours
1 tablespoon sesame oil for frying
3 cloves garlic, minced
2 teaspoon ginger, minced
1 red bell pepper diced
20 ounces canned pineapple (reserve 1/2 cup liquid)
Sauce
1/2 cup pineapple juice
2 tablespoons honey
2/3 cup hoisin sauce
2 tablespoons soy sauce
1/3 cup chicken broth
1 tablespoon cornstarch
1/4 cup water
Optional Garnish
1 tablespoon green onions, sliced
1 tablespoon sesame seeds

* homemade Hoisin
1/4 cup soy sauce
4 tablespoons molasses
2 tablespoons creamy peanut butter
2 teaspoon rice vinegar
2 teaspoon sesame oil
1 clove garlic grated
1 teaspoon hot chile sauce such as Sriracha
1/8 teaspoon ground black pepper

Fry Bread
tallow, lard or oil for frying
4 cups flour
1 tbsp baking powder
1 tsp salt
1.5 cups warm water

Pork Filling
2 pound pork roast
2 cups dried pinto beans
4 cups chicken or vegetable broth
1 cup water
1 onion, chopped
1 4 oz can chopped green chilis
2 Tablespoons garlic, chopped
1.5 Tablespoon taco seasoning
Slow Cook on low for 6-8 hours
