This tuna salad is not only quick to prepare but also super healthy and filling. A perfect choice for a protein-packed lunch or snack! Ingredients:
1 cucumber
1 can of tuna (drained)
1/4 cup Greek yogurt
1–2 tablespoons corn (cooked or canned, drained)
1–2 tablespoons green peas (cooked or thawed if frozen)
1–2 tablespoons cucumber pickles (chopped)
1 tablespoon lemon juice (optional)
1–2 teaspoons fresh dill (chopped)
Salt and pepper to taste
Instructions:
Cut the cucumber into halves or thirds and scoop out the center with a spoon to make boats.
In a bowl, mix tuna, Greek yogurt, corn, green peas, cucumber pickles, dill, lemon juice, salt, and pepper.
Fill each cucumber boat with the tuna salad mixture.
Garnish with extra dill if desired.
