Ingredients:
500g small potatoes
Olive oil (for drizzling or spraying)
1 tbsp mixed dried herbs or freshly chopped rosemary
3 garlic cloves, minced
Sea salt, to taste
Instructions:
Preheat your fan-forced oven to 200°C (392°F).
Place the potatoes in a large pot and cover them with water. Bring to a boil and cook for 10–15 minutes, or until the potatoes are fork-tender.
Drain the potatoes and transfer them to a baking tray. Using the base of a glass or cup, gently smash each potato to flatten them slightly.
Generously drizzle or spray olive oil over the smashed potatoes. Rub the oil into each one.
Sprinkle with the minced garlic, herbs, and a generous pinch of sea salt.
Bake in the oven for 15 minutes. Then drizzle or spray a bit more olive oil over the top and return to the oven for another 15–20 minutes, or until golden and crispy.
Finish with an extra sprinkle of sea salt before serving.
