Green Chicken 65 (Vijay Sethupathi special!)
Ingredients (Makes 4 servings – 260 Kcal, 30 g P, 11 g F, 10 g C per Serving)
500 g boneless skinless chicken thigh cubes
To blend –
1.5 cups coriander leaves and stems
1/2 cup mint leaves
3/4 inch piece of ginger
2-4 green chilli
1 tbsp garlic cloves
2 tsp cumin seeds
Water as required
Remaining ingredients for marinade –
4 tbsp Greek yoghurt or thick curd
1 egg
1/3 tsp turmeric powder
1 tsp coriander powder
1 tsp black pepper powder
1.5 tsp garam masala
Salt to taste
5 tbsp rice flour
1/2 tsp aromat powder (optional)
Curry leaves as required
To serve –
Sliced onions, chillies and lemon juice

Method
1. Marinate chicken with all ingredients except rice flour for at least 30 mins.
2. When ready to cook, mix in the rice flour and aromat powder.
3. Spray with oil and air fry at 180 C for 8-9 mins. Flip the chicken oven, add curry leaves, spray with a little more oil and air fry at 200 C for another 3-4 mins. If baking, bake at 200 C on one side for about 8 mins, flip over and cook for another 6-7 mins. You can also shallow fry the chicken.
4. Toss the chicken while it’s still hot with onion, chilli and lemon juice.
