Low-Fat Chicken Alfredo Meal Prep

This recipe makes 10 delicious servings with each containing approximately 525 calories, 47g of protein, 13g of fat, and 57g of carbs. Perfect for meal prepping!

Ingredients:

32 oz chicken breast
30g shaved Parmesan
Juice from 1 lemon
2 tsp garlic seasoning
2 tsp garlic powder
2 tsp onion powder
1 tbsp salt
1 tsp black pepper
Dash of crushed red pepper
1/2 cup water
30g butter
Instructions:

For the chicken:
Cook on High for 2-3 hours or Low for 3-4 hours.
Add chicken, seasonings, water, and butter to the slow cooker, and cook until tender.
For the Alfredo sauce:
Blend 660g of 2% cottage cheese, 120g of 1/3 fat cream cheese, and 120g of Parmigiano Reggiano.
Add 240ml of fat-free milk and blend until smooth.
Heat in the microwave for 1.5 to 2 minutes to warm up. If storing in the freezer, allow 4 minutes for the pasta to absorb the sauce when reheating.
