Looking for a quick and healthy tea-time snack or kids’ tiffin idea? Try this easy Suji Veg Egg Roll made with simple ingredients like suji (semolina), fresh veggies, and eggs. Soft, savory, and packed with flavor from garam masala and herbs, this recipe comes together in minutes and makes a perfect light meal or lunchbox option. No fancy ingredients, just real food from your kitchen—serve it with chutney or enjoy it as is!

Ingredients:

For the batter:

1 cup suji (semolina)

¾ tsp salt

½ cup water (for blending)

¾ cup water (to rinse blender and add to batter)

¾ cup thinly sliced carrot

¾ cup thinly sliced onion

2 green chilies, chopped

2 tbsp chopped coriander

¼ tsp garam masala powder

For the egg mix:

2 eggs

¼ tsp turmeric

¼ tsp black pepper

A big pinch of salt

To cook:

1 tsp oil per roll (as needed)

Instructions:
Make the batter:
In a blender, add 1 cup suji, ¾ tsp salt, and ½ cup water. Blend into a smooth paste.
Pour the mixture into a bowl. Rinse the blender with ¾ cup water and pour that into the same bowl.

Add veggies and spices:
Add the thinly sliced carrot, onion, green chilies, chopped coriander, and ¼ tsp garam masala powder. Mix everything well and let it sit for a few minutes.

Prepare the egg mix:
In a separate bowl, whisk together the eggs, turmeric, black pepper, and salt until fluffy.

Cook the roll:
Heat a nonstick pan with 1 tsp oil. Pour a ladle of the suji batter and spread it like a pancake or dosa.
Let it cook on medium heat until the top is dry.

Add egg mix:
Spread a spoonful of the egg mixture over the top and let it set slightly. Then flip carefully.
Let the other side cook, then flip again, add a little more egg mix if needed, and cook both sides until done.

Serve:
Roll it up or serve flat with your favorite chutney or ketchup. Perfect for lunchboxes too!
