Try this quick and easy Instant Suji ke Appe recipe – perfect for breakfast or evening snack! Made without fermentation, these soft and crispy appe are not only tasty but also healthy. Serve with coconut chutney or green chutney and enjoy a South Indian treat at home!

Recipe:
Ingredients:
• 1 cup suji (semolina)
• 1/2 cup curd
• 1/2 cup water (adjust as needed)
• 1 finely chopped onion
• 1 grated carrot
• 1 chopped green chilli
• 1/2 tsp mustard seeds
• 5-6 curry leaves
• Salt to taste
• 1/4 tsp eno or baking soda
• Oil for greasing appe pan

Instructions:
1. Mix suji, curd, salt, and water to make a smooth batter. Rest for 10 mins.
2. Add chopped veggies to the batter.
3. Heat oil in a small pan, add mustard seeds, curry leaves – temper and mix into batter.
4. Just before making, add eno and mix lightly.
5. Grease appe pan, pour batter in each mould, cover and cook on low flame.
6. Flip when golden brown, cook other side too.
7. Serve hot with chutney!
