Honey Soy Beef & Onion with Instant Ramen Noodles, served as a complete meal
o Serving: 4
o Time: total: 20 minutes
o Calorie: 700/serving
o Protein: 33g/serving
o Equipment: a large nonstick pan/skillet
Ingredients:
+ For the marinated beef (velveting method):
• 16-18 oz (454-510g) flank/skirt/flat iron/top sirloin steak, slice against the grain into 1/8-inch-thick slices
• ½ tsp (2.5g) baking soda
• 1 ½ tsp (3.5g) cornstarch
• ¼ tsp (0.6g) ground pepper
• 1 tsp (5ml) sesame oil
• 1 ½ tsp (8ml) light/regular soy sauce
+ For the sauce:
• 1/3 cup light/regular soy sauce
• ¼ cup (60ml) honey
• ½ TBS (4g) cornstarch
• 2 TBS (30ml) hoisin sauce
• ½ tsp (1.2g) ground ginger
• ½ to 1 tsp (1-2g) red pepper flakes (spicy), OPT
• 1 tsp (5ml) dark soy sauce
• 2 tsp (10ml) rice vinegar OR white vinegar
• 2 tsp (10ml) (toasted) sesame oil
+ For the rest:
• 4 pack instant ramen noodles (Maruchan/Nissin)
• 1 TBS (15ml) (toasted) sesame oil
• 2 medium yellow onion, sliced into strips
• 3 to 4 green onions, keep white and green separate, split white in half, cut all into 1 ¼-inch sticks
• 3 large garlic cloves, minced
• 2 ½ TBS (37ml) vegetable/Canola oil
• OPTIONAL (for serving/garnishing): lime wedges, sesame seeds, hot sauce, hot pepper
Instructions: simultaneously boil/cook the noodles while working on the rest.
1. Boil water and cook ramen noodles until softened (about 1 ½ minutes). Drain the liquid off then drizzle 1 TBS of sesame oil over the noodles; mix and set aside.
2. Slice the steak then mix it with the rest of the marinade ingredients in a mixing bowl. Let rest in room-temperature while we prepare the rest.
3. Prep the produce (yellow onion, green onion, garlic). Mix all sauce ingredients together; set aside.
4. Preheat a large nonstick pan with 2 ½ TBS (37ml) oil over medium-high heat for 1 to 2 minutes.
5. Add minced garlic. Stir infrequently until slightly browned.
6. Add the beef, spread it out evenly in the pan. Let cook undisturbed until slightly browned in the bottom. Stir up.
7. Add yellow onion and white part of green onion; stir in with the beef for a few seconds.
8. Re-stir the sauce and pour in. Stir until thickened. Adjust seasoning to taste if needed. Add the rest of the green onion; stir and remove from heat.
9. Divide noodles among plates and top each serving with the honey soy beef and onion. Spoon the sauce over as much as you’d like. Sprinkle some sesame seed and have slices of lime on the side for fresh squeezes if desired (my favorite). Enjoy!
