Healthy Grilled Paneer Sandwich

Per sandwich (approx.):
Calories: ~370–400 kcal
Protein: ~22–25g
Fats: ~22g (from paneer, avocado, cashews)
Carbs: ~20–25g (depending on bread used)

A high-protein, wholesome sandwich perfect for weight loss meals—tasty, filling, and macro-friendly.

Ingredients:

200g paneer, cut into strips

1 tbsp peri peri or Mexican seasoning

1 red bell pepper, charred

8–10 soaked cashews

3 soaked Kashmiri red chilies

2 garlic cloves

1 tbsp hung curd

Salt to taste

2 toasted bread slices (choose multigrain or whole wheat)

Lettuce leaves

½ avocado, sliced

Pickled onions

Method:
Grill the Paneer:
Coat paneer strips with seasoning. Cook on a non-stick pan until golden on both sides.

Prepare the Chipotle Sauce:
Blend together charred red bell pepper, soaked cashews, red chilies, garlic, 30g of the grilled paneer, hung curd, and salt. Blend until smooth and creamy.

Assemble the Sandwich:
Spread the sauce on both slices of toasted bread.
Layer with lettuce, grilled paneer, sliced avocado, and pickled onions.

Serve:
Close the sandwich, slice if desired, and serve fresh.
