This is one of my favorite low calorie meals for weight loss. This Chicken and Brown Rice Soup with Spinach is so simple and easy to make. Best of all, you can make it in under 30 minutes!

Chicken and Brown Rice Soup w Spinach

1 Tbsp Extra Virgin Olive Oil (divided)
16oz Chicken Breast (diced into bite sized pieces)
Pink Himalayan Salt (to taste – for lower sodium a dash is just fine)
Black Pepper (to taste)
1/2 tsp Garlic Powder
1/2 tsp Onion Powder
2 Cloves of Garlic (minced)
1/3 Sweet Onion (or about 2.5 ounces, minced)
1 cup Carrots (or about 7-8 ounces, chopped)
6 cups of water
2 tbsp Better than Bouillon Vegetable Base
2 cups of instant brown rice (or about 2 – 2 -1/3 cups)
1 cup of frozen spinach (or 3 cups fresh)

Heat half of the olive oil in a pan. Add diced chicken breast. Season with a garlic powder and onion powder, along with salt and pepper to taste. Sauté and cover until doneness (about 5-7 minutes).

Add the remaining olive oil in a large pot. Add garlic, onion and carrots (celery, if you have it) and sauté until onions are translucent (about 3-5 minutes).

Add water to vegetables, heating through. Add bullion base to water and vegetables. Add cooked chicken. Bring to boil.

Add rice and spinach. Return to boil. Cook for approximately 12-15 minutes. Let stand for 5 minutes and serve.
