3½ cups overripe bananas
1 cup melted butter, coconut or olive oil
4 eggs
3 tsp vanilla or banana extract
1 cup buttermilk or unsweetened plain yogurt
3 cups all-purpose flour
2 tsp baking soda
1 tsp baking powder
1 tsp kosher salt
2 tsp nutmeg
½ cup mixed nuts & raisins
📌 Optional Tip: To make homemade buttermilk, mix ½ cup milk + 1½ tsp vinegar or lemon juice and let sit for 10 minutes.
