Healthy Plantain Apple cookies! You can even eat these for breakfast, they’re THAT healthy and delicious! And don’t be shy mixing up the recipe- throw in some walnuts and raisins, some dried apricots or cherries… whatever you’d like!

Chewy Plantain Apple Cookies
2 Ripe Plantains, skin removed
1 Apple, peeled and chopped
1/3 C Cassava Flour
1-2 TBSP Cinnamon
Dash of Salt
2 TBSP Olive Oil

Blend ingredients together in a food processor or blender, minus the chopped apple pieces.
Fold in Apple pieces.
Drop by spoonfuls to parchment lined baking pan and form into cookie shapes.
Bake 350* for 30 minutes, until golden brown.
Allow to cool and become chewy.
