Ingredients
For the salmon:
• 1 salmon fillet, skin removed + cut into bite-sized chunks
• 2 tbsp arrowroot powder
• 1 tsp garam masala
• 1 tsp paprika
• ½ tsp cumin
• ½ tsp coriander
• ½ tsp garlic powder
• ½ tsp ginger powder
• ¼ tsp black pepper
• Optional: pinch of red chili powder or flakes
• Salt to taste
• Avocado oil (optional)

Sticky dipping sauce:
• 1 tbsp maple syrup
• 1 tsp sesame oil
• 1 tbsp soy sauce
• 1 tsp rice vinegar
• 1 tsp oyster sauce
• 1 clove garlic, grated (or ½ tsp powder)
• ½ tsp grated ginger (or powder)

Instructions
1. Toss salmon chunks with all spices and arrowroot until well-coated.
2. Lightly drizzle with oil and air fry at 400°F (200°C) for 17–19 min, flipping halfway through until crispy and golden.
3. In a pan, simmer all sauce ingredients until thickened slightly (about 3–5 min).
4. Serve salmon hot with the sauce on the side or drizzled on top.
