OATMEAL PANCAKES
1 tablespoon flaxseed meal
3 tablespoons water
1/2 cup all-purpose flour
1/2 cup rolled oats
1 tablespoon turbinado sugar
1/4 teaspoon salt
2 teaspoons baking powder
3/4 cup unsweetened plain plant milk
1 teaspoon vanilla extract
1 tablespoon maple syrup
2 tablespoon melted vegan butter

BOLOGNESE
1 white onion, diced
2 cloves garlic, minced
1 large carrot, finely-diced
2 stalks celery, finely-diced
8 oz fresh mushrooms, thinly-sliced
1 (28 oz) can crushed tomatoes
1 (12 oz) package beef-style crumbles
1/2 cup vegetable broth
1 tablespoon Worcestershire sauce
1 bay leaf
1/2 teaspoon dried thyme
salt and pepper, to taste
1 lb pasta, prepared according to package instructions

1. In a Dutch oven or stockpot over medium-high heat, sauté mushrooms in a bit of olive oil until they’ve released most of their excess liquid and shrunk considerably.

2. Add onion, garlic, carrot, celery and sauté until onion is tender and slightly browned, about 5-8 minutes.

3. Add remaining sauce ingredients and bring to a gentle boil. Reduce heat to low and simmer for about 25-30 minutes, until sauce has thickened.

4. Remove bay leaf, season with salt and pepper to taste, and serve over pasta.

ERIC’S SPICY BROTH OF JOY + WONDER
3 cups vegetable broth
3 cups water
2 heaping tablespoons white miso paste
splash of soy sauce
1 teaspoon sesame oil
splash of rice vinegar
1 – 3 tsps chile paste
1 tablespoon minced ginger
1 tablespoon minced garlic
1 teaspoon onion powder
1 teaspoon garlic powder
black pepper, to preference
