Welcome to my weekly diabetic meal prep video today! Today I am preparing two different meals, and one dessert to last me through the week of Easter! Since my little ones will be home for the week, it is important that I have meals ready and set for me to go. Nutrition and calories are listed below.

Caramel apple dip: 4 servings
-Greek yogurt of choice – I use the caramel apple pie light and fit
-half container of sugar-free Cool Whip
– half packet of sugar-free cheesecake Jell-O pudding.
– 8 tablespoons of sugar-free caramel syrup
-apple slices for dipping.
1.) combine Cool Whip, yogurt, sugar-free Jell-O, and caramel syrup
2.) drizzle with more caramel, ready to go for dipping!
Walking taco bowls: four servings
-One cup Mexican rice
-One can refried beans
-1 pound lean ground beef – I use 96%
-One small can red enchilada sauce
-One single serve plain Greek yogurt
-salsa con queso dip
-shredded reduced fat cheese of choice
-crush of Doritos.
1.) prepare rice in instant pot, once completed, add refried beans and mix until a sticky paste.
2.) prepare taco meat, combine lean ground beef with a taco seasoning packet and splash of water.
3.) assemble bowls with rice and refried bean mixture, lean ground beef.
4.) mixed together 2 tablespoons enchilada sauce with 2 tablespoons Greek yogurt. Top bowl with mixture.
4.) at half a tablespoon nacho cheese queso.
5.) 1 tablespoon shredded cheese of choice. And a few crushed Doritos. Enjoy!
Chicken Caesar pasta bowls: four servings
– 2 cup cooked whole-grain pasta
-16 ounce chicken of choice
-few big handful shredded lettuce
-4 tablespoons Parmesan
-4 tablespoons crushed croutons
1.) prepare whole wheat, pasta, and water, and chicken of choice.
2.) once pasta and chicken is cool, combine pasta, and shredded lettuce in a bowl. Evenly distribute in four meal prep container containers.
3.) top with chicken, Parmesan cheese, and croutons.
4.) serve with any low-fat Caesar dressing.
