Ingredients
For the Malai Kebab
● 1 bowl paneer (Indian cottage cheese), grated
● 2–3 boiled potatoes, mashed
● 1⁄2 cup green peas (boiled)
● 1⁄2 cup corn (boiled)
● 1⁄2 cup carrots, finely chopped or grated
● 2–3 green chilies, finely chopped
● 1 small onion, finely chopped
● 1⁄2 tsp chaat masala
● Salt, to taste
● 1⁄4 tsp garam masala
● 1⁄4 tsp crushed fennel seeds
● Grated cheese (as needed)
For the Gravy
● 2 tbsp butter
● 1 small onion, finely chopped
● 2 garlic cloves, minced
● 1⁄4 cup cashew paste
● 1⁄4 cup fried onions
● 1⁄4 cup fennel seeds
● 2 tbsp fresh cream
● Kasuri methi (dried fenugreek leaves), crushed
● Salt, to taste
● Chopped coriander
● Crushed fennel seeds
● A pinch of elaichi powder (cardamom)
For Assembly
● Hot dog buns
● Mint mayo
● Purple cabbage, finely shredded
