This is my go-to recipe when I want homemade bread. This bread is perfect for anytime and makes the perfect loaf. This bread when cut easily fits in your toaster. Sour Dough Bread
This makes 2 loaves. My video shows how to make 1 loaf.
600g water
200g active sourdough starter
80g honey or maple syrup
40g avocado oil or any unflavored oil
1050g bread flour
4 tsp salt
Feed your starter the night before.
Pour water into a large bowl add the active sourdough starter at peak, whisk until dissolved and milky. Add honey and oil, whisk to combine, add flour and salt. Mix, knead the dough with your hands until combined. Cover and let rest for 1 hour.
Wet your hands and perform your 1st set of stretch and folds. Cover, let rise 30 min. Perform. your 2nd set of stretch and folds. Cover and put in the oven with only the light on until it bulks up 50%. This can take 3-6 hours.
Now it is time to get your dough ready for the pan. Roll it out to fit into your PAIN DE MIE pan or other baking pan of choice. Place dough in pan and let it rise until it is about an inch from the top.
Preheat over to 375º. Bread is done when inside temperature is 198F.
