EP: 5 of “IPL Game Day Recipe” – “Veg Biryani”

I N G R E D I E N T S : (serves 4)
•for Marination –
1 cup curd
Veggies of choice here’s what I have used-
1/2 cup French Beans
1/2 cup Carrot (boiled)
1 cup Bell Peppers
1/2 cup Baby Corns
5 Boiled Potato, chopped
250gm low fat paneer
1 tbsp salt
2 tbsp Kashmiri chilli
1 tbsp chaat masala
1 tbsp coriander powder
1 tsp turmeric powder
1 tbsp garam masala
1 tsp biryani masala
2 tbsp ginger + garlic + chilli paste
Some fresh mint & coriander
1/2 cup air fried onions (comment if you want recipe)
1 tbsp ghee

– marinate all the veggies as shown.
– let it marinate for 20 mins.
– cook down veggies with 1 tbsp ghee for 15 mins

• for Rice –
1 cup soaked basmati rice
4-5 black peppercorns
2-3 cardamom
2 bay leaves

– boil rice till 90% cooked

• for final DUM & Layering –
– layer the cooked veggies followed by a layer of cooked rice
– then some fresh mints and coriander
– lastly by air fried onions
– repeat the process twice
– cover the lid with seal with cloth as shown
– cook for next 10 mins on low flames

Serve with High Protein Raita 🥹
