Red Beans & Collard Greens:
Ingredients:
1 Ib Kidney beans, soaked overnight
1 bunch of greens
1 yellow onion
1 red bell pepper
1 green bell pepper
2 tbs minced garlic
4-6 cups vegetable broth
2 bay leaves
Thyme
Oregano
Salt
Black pepper
Smoked paprika
Cumin
Cayenne pepper
*Serve with rice
Red Lentil Curry:
1 cup red lentils, rinsed
1-2 tbs of olive oil
1 Red onion
2 serrano peppers
2 inch piece of ginger
4 cloves of garlic
2 cups of vegetable stock
14 oz of fire roasted crushed tomatoes
1 14 oz can of coconut milk
3 tbs almond butter
Spice blend:
1 tsp: tumeric
1 tsp cumin
1/2 tsp coriander
1/2 tsp chilli powder
2 tsp Curry powder
1 tsp Garam Masala
1 tsp salt
Black pepper to taste
*Serve with brown rice
Southern Style White Beans:
1 Ib of great northern beans or navy beans
1 Ib of Vegan andouille Sausage
1-2 tbs of avocado oil
1 red onion
1 red bell pepper
1 green bell pepper
1 rib of celery
3 cloves of garlic
8 cups Veggie stock
creole seasoning to taste
Cayenne pepper to taste
Black pepper to taste
2 bay leaves
* Serve with brown rice
Vegan Andouille Sausage:
2 3/4 cup vital wheat gluten
1/3 cup nutritional yeast
2.5 tsp Cayenne pepper
2.5 tsp smoked paprika
2 tsp thyme
1 tsp ground mustard
1/2 tsp black pepper
1 tsp salt
2 cups vegetable broth
3 tbs olive oil
1/4 cup Soy sauce
4 cloves of grated garlic
1 tbs apple cider vinegar
2 tps molasses
1 cup of pinto beans
