Tastes like your favourite subway sandwich, but made at home! With a healthy twist and a creamy, guilt-free mayo to go with it 😀

Ingredients:

For Spicy Mayo
• 1 cup Paneer
• 3 Kashmiri Chillies (de seeded & soaked in hot water)
• 1 cube Amul Cheese
• Salt to taste

For Aloo Tikki:
• 1 tbsp Ghee
• 1 tsp Jeera
• Pinch of Hing
• 1 tbsp Ginger Garlic Paste
• ½ cup Onion finely chopped
• ½ cup Capsicum finely chopped
• ½ cup French Beans finely chopped
• ½ cup Carrot finely chopped
• ½ cup Green Peas boiled
• 1+½ cup Potato boiled & mashed
• 1 tbsp Red Chilli Powder
• ½ tsp Turmeric Powder
• 1 tbsp Coriander Powder
• 1 tbsp Garam Masala
• 1 tsp Pav Bhaji Masala
• Salt to taste
• Bread crumbs
• Ghee for cooking

Assembly:
• Subway Loaf
• Cheese slices
• Lettuce
• Sliced Veggies (onion, tomato, cucumber, capsicum)
• Mint and Yogurt Chutney
• Chaat Masala

Method:
– For the paneer spread combine all the ingredients in a blender and grind into a smooth paste
– Heat ghee in a pan, add in Jeera, Hing, ginger garlic paste, onions and sauté till translucent
– Add in capsicum, beans, carrot, peas and sauté for another 3-5 minutes. Add water if needed
– Lastly add in potatoes with all the masalas mentioned, salt and mix it well till it all comes together
– Cool it down, shape into tikkis, coat well with bread crumbs and cook on a tawa till golden brown and crispy from both sides.
– Toast your subway bread with or without cheese slices
– Lather a layer of the paneer spread, top with the Aloo Tikki, a drizzle of mint and yogurt chutney, lettuce leaves, sliced vegetables, chaat masala and sandwich it up
– Serve with a side of chips & enjoy!
