Who is ready for back to school?!?!? Well I know a lot of you have already started :))

In this video I show you how to make 5 easy and super healthy lunches that you can take with you back to school! My philosophy in school was to always prepare a really exciting and delicious lunch, so that I would have something to look forward to during the day (because let’s be honest, we need something to look forward to). These are just a few recipes that I thought would be perfect lunches that you could take back to school, work, university, college, or to just make for yourself at home.

R E C I P E S:

(I usually don’t measure anything, I just go by eye, so these are just approximations)

LUNCH 1:

Broccoli and Chickpea Salad

Ingredients:

– large handful of broccoli florets
– 1/3 cup chickpeas (seasoned with salt & pepper, cumin, paprika, sriracha)
– 1/4 of a zucchini
– 2 or 3 mushrooms
– red onion
– 1/2 spring onion
– 1/3 cup chicken breast
– large handful of spinach
– small handful purple cabbage

LUNCH 2:

Burrito Bowl with a Twist

Ingredients:

– large handful of mixed greens
– 1 Tbsp avocado dressing
– 1/4 cup tri-coloured quinoa
– 3 cherry tomatos
– 1/3 cup black beans
– red onion
– 1/4 cup corn kernels
– tomato salsa
– few slices of avocado
– 1/3 cucumber
-1/2 beetroot
– basil

LUNCH 3:

Hummus & Vegetable Wrap

Ingredients: (quantities will vary depending on size of wrap)

– quinoa wrap (
– cucumber slices
– red capsicum slices (red bell pepper)
– red onion slices
– cherry tomatos
– 3 falafels sliced
– avocado slices
– hummus to spread on wrap
– basil

LUNCH 4:

Black Bean Protein Pasta

Ingredients:

– 2 cups black bean pasta (or however much desired)
– few slices of cherry tomatoes

Dressing

– 1 Tbsp hummus
– lemon juice
– sprinkle of nutritional yeast (great for energy)
– salt & pepper
– sriracha
– little bit of red onion

LUNCH 5:

Chicken Salad (couldn’t think of a better name lol)

Ingredients:

– large handful of mixed greens
– 1 poached chicken breast (seasoned with salt & pepper, cumin, paprika, sriracha)
– 1/4 cup red bell pepper
– 1/3 cucumber
– red onion
– 1/2 grated carrot
– 2 cherry tomatoes

Dressing

– 1 Tbsp hummus
– lemon juice
– Apple Cider Vinegar
– nutritional yeast
– basil
– salt and pepper
