You know what’s the best thing about burgers? They can be anything you want them to be. This one? It’s all about that golden, crispy chana dal patty that brings a whole new flavour to your plate. It’s warm, it’s filling, and it’s loaded with spices that hit in all the right places.

Ingredients:
For the Patty (Tikki):
● 1 cup soya nuggets (Nutrela)
● 1 cup chana dal
● 3–4 cloves garlic
● 2-inch piece ginger
● 2 dried red chilies
● 1 tablespoon cumin seeds
● Whole dry spices:
○ 2–3 cloves
○ 1 cinnamon stick
○ 1 black cardamom (badi elaichi)
● Salt, to taste
● 1 medium onion, chopped
● 1 green chili, chopped
● Handful of fresh coriander, chopped
● 1 cup water
● 1 tablespoon ghee (for pressure cooking)
● 2–3 tablespoons ghee or oil (for shallow frying)

For Assembling the Burger:
● Burger buns
● Tandoori mayo (or any spiced mayo of choice)
● Onion slices
● Tomato slices
● Cucumber slices
● Cheese slices (optional)

Instructions:

1. Prepare the Tikki:
1. Soak soya nuggets in warm water for 5–10 minutes. Drain and squeeze out excess water.
2. Soak chana dal in warm water for 30 minutes. Drain.
3. In a pressure cooker, combine:
○ Soya nuggets
○ Chana dal
○ Ginger, garlic, red chilies
○ Cumin seeds, whole spices, salt
○ 1 cup water and 1 tablespoon ghee
4. Cook
5. Let the pressure release, then grind the mixture into a smooth paste.
6. Mix in chopped onion, green chili, and coriander.
7. Shape into round tikkis (patties).

2. Assemble the Burger:
1. Shallow fry the tikkis on a tawa until golden and crisp.
for 3–4 whistles.
2. Toast burger buns until golden on the inside.
3. On the bottom bun:
○ Spread a layer of tandoori mayo
○ Add onion, tomato, and cucumber slices
4. Place the fried tikki on top.
5. Add a cheese slice (optional).
6. Close with the top bun.
Serve hot with fries or a side salad.
