Healthy Tuna Hummus Toast
(Serves 4)
Ingredients:
– 600 g bread
– Olive oil (drizzled on bread before baking)
– 130 g tuna (drained)
– 15 g coriander
– 40 g red onion
– 1 garlic clove
– 40 g cashew nuts
– Salt and black pepper to taste
– 4 tbsp tahini
– 30 g olive oil
– 1 tsp grated lemon zest
– Juice of 1 lemon
– 200 g cooked chickpeas
Instructions:
1. Prepare the Bread: Slice the bread and drizzle olive oil on top. Place it in the oven at 250°C for 5 minutes, or until it becomes golden and crispy.
2. Prepare the Hummus Mixture: In a food processor, combine the coriander, red onion, garlic clove, cashews, salt, black pepper, tahini, olive oil, grated lemon zest, and lemon juice. Process until smooth and well-blended.
3. Combine with Tuna and Chickpeas: In a separate bowl, combine the cooked chickpeas and drained tuna. Add the hummus mixture to the bowl and mix everything together until well combined.
4. Assemble the Toast: Spread the tuna hummus mixture generously on the crispy toasted bread.
