Ragi Banana Pancake
Ingredients:
1 ripe banana (mashed)
½ cup ragi flour (finger millet flour)
¼ cup whole wheat flour (optional for texture)
1 tbsp jaggery or honey (adjust to taste)
½ tsp cinnamon powder (optional)
½ tsp baking soda
½ cup milk (dairy or plant-based)
A pinch of salt
Ghee or butter for cooking
Instructions:
1. Mash the banana in a mixing bowl until smooth.
2. Add ragi flour, whole wheat flour, jaggery, cinnamon, baking soda, and salt.
3. Pour in milk gradually and whisk to make a smooth, pourable batter.
4. Heat a non-stick pan and lightly grease with ghee or butter.
5. Pour a ladle of batter and cook on low-medium heat
6. Flip once bubbles form and cook until both sides are golden brown.
7. Serve with berries, honey, or nut butter.
