6 Instant Pot Recipes to Meal Prep for a Week
Hey, guys. Today I am sharing 6 super simple ingredients you can cook within a few hours in your Instant Pot on Sunday and use to make healthy dinners and lunches during the week. If you have 2 Instant Pots, it’s even better. 🙂

🔴#1 CHICKEN BREAST
● Up to 3 lbs chicken breasts – as much as you can fit in single layer.
● 1 cup water
● 2 tsp garlic powder
● 1 tsp salt
● Ground black pepper
Add 1 cup water, steamer basket or trivet and chicken.
Close the lid, set pressure vent to Sealing.
Cook on high pressure FRESH 6 – 10 oz = 10 mins, 10 oz and more = 15 mins. FROZEN 6 – 10 oz = 15 mins, 10 oz = 20 mins
Let pressure come down naturally for 5 minutes and then turn to Venting to release remaining pressure.
Refrigerate whole, shred with 2 forks or cube. Use in salads, soups, make quick plates with black beans or sweet potato below. Anything!

🔴#2 INSTANT POT SWEET POTATOES
Add 1 cup water, steamer basket or trivet and as many sweet potatoes as you can fit.
Close the lid, set pressure vent to Sealing.
Cook on high pressure depending on thickness the widest part: 2 inches – 15 mins, 2-3 inches – 25 mins, over 3 inches- 35 mins
Release pressure with Quick Release.
Serve as a side dish with butter or olive oil, salt and pepper. Or load up Mexican style with black beans, avocado, salsa, cheese, cilantro etc.
🔴#3 INSTANT POT BLACK BEANS
● 1 cup dried black beans, rinsed & drained
● 3 cups water
Close the lid, set pressure vent to Sealing and cook on high pressure for 12 mins.
6 quart Instant Pot: Let pressure come down on its own until pin drops.
8 quart: Do Natural Release for 10 mins and then turn valve to Venting.
Serve in a salad, soup or as a side.

🔴#4 INSTANT POT EGGS
Add 1 cup water, steamer basket or trivet and as many eggs as you like.
Close the lid, set pressure vent to Sealing and cook on high pressure for 5 mins.
Release pressure right away, cool eggs in cold water for a few mins and peel SO EASY.
Enjoy as a snack, in an egg salad, meal size salad with chicken breast and greens.

🔴#5 INSTANT POT GROUND MEAT
● 1 – 2.5 lbs any fresh or frozen ground meat
● 1 cup water
Add 1 cup water, trivet and ground meat.
Close the lid and set pressure vent to Sealing.
Cook on High pressure fresh or frozen poultry 10 mins, red meat for 25 mins.
Release pressure right away and remove meat into a bowl, cut with a knife and then shred with 2 forks.
Sprinkle with taco seasoning or saute in Instant Pot an onion with ground meat and other seasonings.
Make tacos, taco salad or sprinkle on any veggies or side.

🔴#6 INSTANT POT BROWN RICE
● 2 cups brown rice, rinsed & drained
● 2 cups cold water
Close the lid, set pressure vent to Sealing and cook on high pressure for 20 mins.
6 quart Instant Pot: Let pressure come down on its own until pin drops.
8 quart: Do Natural Release for 10 mins and then turn valve to Venting.
Serve with protein and veggies. Reheat in a pot with a splash of water covered and simmered on low.
