🥪Ingredients
For the Veggie Filling:
½ cup finely chopped cabbage
½ cup finely chopped spinach
½ cup grated or finely chopped carrots
100g paneer (Indian cottage cheese), grated
½ tsp red chilli powder
½ tsp garam masala powder
1 tsp salt
For the Yogurt Dip:
â…“ cup thick plain yogurt
2–3 garlic cloves
2 tbsp cashews
1 tbsp honey (or any sweetener of choice )
½ tsp red chilli powder
1 tsp salt
¼ tsp Italian seasoning (or your favourite seasoning)
¼ tsp smoked paprika (optional)
To Assemble:
Bread slices of your choice (whole grain, sourdough, or multigrain work well)
🥪 Instructions
Prepare the Veggie Filling:
In a medium-sized bowl, add cabbage, spinach, carrots, grated paneer, red chilli powder, garam masala, and salt. Mix everything well using a spoon until well combined.
Make the Yogurt Dip:
In a blender, add yogurt, garlic cloves, cashews, honey, red chilli powder, salt, Italian seasoning, and smoked paprika (if using). Blend until smooth and creamy.
Combine:
Pour the prepared yogurt dip into the veggie mixture. Mix thoroughly until the filling is evenly coated and creamy.
Assemble the Sandwich:
Spread the filling generously onto a slice of bread. Top with another slice if making a sandwich. You can enjoy it as is or toast it on a pan/grill for a warm, crispy finish.
