Ingredients:
Beetroot (peeled and grated) 1kg
Apple cider vinegar 120ml
White vinegar 150ml
Water 220ml
Sugar 80gm
Black salt 0.4 gm
Salt 8gm
Coriander seeds 8
Black pepper 6gm
Ginger powder 2gm
Cloves 5-6
Method:
• In a wide pan, add beetroot, water, both the vinegar and start cooking covered on a medium-low flame.
• Toast the whole spices on low heat till fragrant. Grind the toasted and cooled spices, black salt, ginger powder, and salt to a fine powder and add to the beetroot along with brown sugar.
Cook cover for 45 min or till the beetroot is completely cooked
Adjust the seasoning if required.
Cool the whole mix down, and grind to a smooth paste.
• Cool the ketchup down completely and store it in the refrigerator.
